"Cham was never just a restaurant. From the very first day, it was a home — a place where Cape Verde's story could be told through food, warmth and genuine love."

Cham opened its doors in 2013 on the sun-drenched R. das Salinas in Santa Maria, with a vision that was equal parts ambitious and heartfelt — to create a dining destination on Sal island that was worthy of the island itself. Bold, beautiful and unmistakably Cape Verde.

From day one, our approach was simple: use the finest ingredients from the Atlantic ocean and Cape Verde's rich earth, cook them with honesty and craft, and serve them in an atmosphere that makes every guest feel like family.

More than a decade later, that philosophy remains unchanged. Over 6,000 happy guests, 50+ seasonal menu creations and 12 years of memories on R. das Salinas — and we are just getting started.

Born in Fogo, trained in Lisbon and in love with Sal — Diogo's cooking is deeply rooted in Cape Verde's flavours with a classical European technique that transforms every ingredient.

12 Years on R. das Salinas

From a small terrace dining room to Santa Maria's most loved restaurant.

2013 — The Beginning
Cham Opens on R. das Salinas

With 10 tables, a terrace and a menu born entirely from Sal's ingredients, Cham opens its doors. Within three weeks, every table is reserved every evening.

2015 — First Recognition
Named Best Restaurant on Sal Island

Cape Verde's leading hospitality guide names Cham the finest dining destination on Sal. The word is out.

2017 — Expansion
Ocean Terrace & Private Dining Added

We expand to include a stunning private terrace and dedicated private dining room for up to 30 guests — the perfect venue for Santa Maria's most special occasions.

2019 — Menu Evolution
Seasonal Tasting Menu Launches

Cham introduces a rotating seasonal tasting menu celebrating Sal's ingredients at their peak. Our most celebrated offering is born.

2022 — Community
Cape Verde Fishermen Partnership

Every piece of seafood on our menu is now purchased directly from Sal island's artisan fishermen at fair prices, every single day.

2025 — Today
Santa Maria's Most Beloved Restaurant

12 years on R. das Salinas. Over 6,000 guests, a team of 12 dedicated people and a menu that never stops evolving. The best chapter is still being written.
